Pumpkin Granola Bars
recipe adapted from Brown Eyed Baker
3 cups rolled oats
1/4 cup flaxseed
1/2 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
3/4 cup light brown sugar
1/2 cup pumpkin puree
1/4 cup applesauce
1/4 cup honey
1 tsp. vanilla extract
1/2 cup toasted pumpkin seeds
1/4 cup cinnamon chips
1/4 cup candy coated sunflower seeds
Directions:
Separate seeds from pumpkin pulp and spread evenly on an ungreased cookie sheet. Drizzle with olive oil and season with sea salt and freshly ground black pepper. Roast in a 350 degree oven, stirring occasionally, for 15 minutes. Remove from oven and set aside.
In a large bowl, combine rolled oats, flaxseed, pumpkin pie spice, cinnamon, salt and nutmeg. In another, smaller bowl, whisk together brown sugar, pumpkin, applesauce, honey and vanilla. Pour the mixture over the oats and stir well. Fold in pumpkin seeds, cinnamon chips and sunflower seeds.
Press into a greased, square baking dish and bake in a preheated 350 degree oven for 35-40 minutes.
Be careful not to undercook. Let cool before cutting. Store an extras in an airtight container.
